PS/2 to USB Adapter
Keyspan has begun shipping what should have been included in the box with every Mac Mini: A PS/2 to USB adapter cable to allow switchers to connect their PS/2 keyboard and mouse to a USB connector.
The female PS/2 connectors are properly color-coded to avoid any confusion (okay, I'n not actually sure why they bothered), and the best part is that it only consumes a single USB port on your Mini. No drivers are required to use a PS/2 keyboard with this connector, but Keyspan is also providing a helper application which will improve the usability of the keyboard by properly mapping Windows function keys to their OS X equivalents.
Get one for just $19.99.
